Valentine Fruit Cups
These are fun and SO simple to make - definitely a winner for taste too!
1 Tbs coconut oil
1 cup unsweetened carob or chocolate chips
mixed fresh berries
In top of double boiler (or in a pan over another pan with 1/2 inch water heated), melt coconut oil (just to melt), then add carob/chocolate chips and stir until completely melted. Remove from heat (stir constantly and DO NOT GET HOT or it will ruin it).
Take silicone molds, add a rounded tablespoon of melted mixture in each cup, then roll around so carob/chocolate sticks to sides. This won't happen well until it slightly cools (use your finger to help if needed). Chill in freeze for 3-5 minutes then remove from molds.
Fill cups with berry mixture, then drizzle more carob/chocolate on top. YUMMY!
NOTES: I choose unsweetened carob chips. They contain no caffeine or stimulants, no sugars or dairy, naturally sweet and are gut friendly. AzureStandard is where I buy my carob chips (go online and set up a free account).
