This bread is so yummy and so is the STUFFING! Try it and See!
PALEO THYME BREAD
1 1/2 cups blanched almond flour
1 teaspoon xanthan or guar gum
1 teaspoon baking soda
3/4 teaspoon salt
6 eggs
1/3 cup olive oil
1/3 cup water
5 drops Thyme essential oil (opt)
1 Tbs apple cider vinegar
Preheat oven at 350F. In medium mixing bowl, combine all dry ingredients and stir together. In another mixing bowl combine all liquid ingredients and mix together with whisk. Pour liquid ingredients into dry and mix with whisk to remove any lumps. Pour into parchment paper lined bread pan, and bake for approximately 45 minutes or until top is lightly browned and touching the top is firm not doughy. Remove and slice!
PALEO STUFFING
6 cups cubed Paleo Thyme Bread
3 Tbs butter
1/2 cup chopped onion
1/2 cup chopped celery with top leaves
2 cloves garlic, minced
3/4 tsp salt
1/2 cup fresh chopped parsley or cilantro (or a mixture of both)
2 drops Thyme essential oil
2 drops Black Pepper essential oil
2 drops Coriander essential oil
2 drops Spanish Sage essential oil
3/4 cup hot broth (chicken or vegetable)
Prepare bread cubes and place in large buttered baking dish; set aside. In large skillet, heat butter, then stir in onion and celery; sauté 2-3 minutes or until tender. Add in remaining ingredients and simmer lightly. Spoon over bread cubes, mix lightly just to distribute. Bake 20 minutes at 350F.
